1/2 cup seasoned dried bread crumbs
1 tbsp. Parmesan cheese
Dash of poultry seasoning
Salt and pepper
2 eggs, beaten
2 tbsp. butter or margarine, melted and cooled
6 boneless,skinless chicken breasts, pounded to 1/4 of an inch thick
1 cup. Mozzarella cheese
6 pieces sliced boiled ham
1 cup. cooked chopped broccoli
2 cups of white rice
What To Do
1. On sheet of waxed paper, combine bread crumbs, Parmesan cheese and seasonings; set aside.
2. In small bowl, combine eggs and butter
3. Cook rice
4.Preheat oven to 375 degrees.
5.Roll each breast into egg mixture and crumb mixture, coat both sides evenly.
6.On each breasts arrange shredded Mozzarella cheese, ham, rice and 2 tablespoons broccoli on top of ham.
7.Place near one end for easier roll-up. Roll to enclose filling. Arrange breasts seams down in baking pan.
8.Bake until tender, about 40 minutes.
