Monday Minute- Memorial Day

Nothing I'm pretty open and honest and not to mention don't really care what people might think of me =)

Is It Bad?

 Sundays are pretty quiet in blog land so I figured I'd think of something so every Sunday I'll post "is it bad" and y'all can feel free to add your own =)


Is it bad that I wake up 2 hours before my kids so I can blog in pure silence?

Is it bad that I cant wait to leave my kids behind in Texas while the hubby and I go to Oklahoma?

Is it bad that I already have the kids and I packed and I still have 6 days to we leave?

Is it bad that I only cook when I need something to blog about?

Is it bad that I check my email, Facebook, Twitter, and Dashboard every hour and if I'm out and about I'm thinking about checking it?

Is it bad that I want to walk across the street and slap the shit out of the little punk that jams the bass in his car everyday during bed-time? Obviously he doesn't know I'm reading Elmo goes Potty and need to have Heavens full focus during this crucial time!!

Is it bad I'm my own toughest critic?

Is it bad I think I go to school for the wrong Major?

Is it bad I can look in the mirror all day and tell you what I don't like but in the same mirror sound super conceded?

Is it bad I try to suck everyone in to getting a blog or READING mine?

Is it bad that I wish my husband would get his ass up so I can finish blogging right now? Or is it bad I just let TJ fuss for 20 minutes so I could finish writing?

PB&J Bars

Today Heaven and I decided we would try a new recipe and in the hope that it worked we would share w/ you. With in the 1st 5 minutes I no longer wanted her help. As you can see she wasn't very "helpful"

( I swear the shirt is clean she just loves to wear


  • 1/2 pound (2 sticks) butter
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups creamy peanut butter
  • 3 cups flour
  • 1 teaspoon baking POWDER
  • 1 1/2 teaspoons salt
  • 1 1/2 cups jam


Mix the butter and sugar on medium speed until light yellow (about 2 min). With the mixer on low speed, add the vanilla, eggs, and peanut butter

In a small bowl, mix the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.

Preheat oven to 350 and grease and sprinkle flour on cake pan

(NOTE: I used smaller pan for thicker bars)

Spread the mix in pan and even out

Cover with Jam...

Bake for 45 mins or till golden brown

Let cool and cut into bars..

They turned out DELISH... You can get the original recipe here for other tips like sprinkled peanuts on the top.


To My Sister

Well Nicki today is you and Kevin's special day. I still have yet to get a call from you letting me know you will be married today. Funny thing when I found out Sunday you were engaged I didn't think that was the last time we'd be hanging out before you got married.

So for not calling me I will pay you back by posting this to your Facebook so the 112 mutual friends we have can read along as Dont worry it's not mean or is it? j/k

I'm not sure if I'm happy, sad, or freaked out about this. I personally would have liked to know Kevin a little better before he becomes such a big part of my niece and nephews life but in the end it is your choice.

I feel like I'm on some Reality show I think it was called "my fat obnoxious fiance" or something and the chick had to convince her family to support the fact she was marrying some disgusting guy that no one knew. KEVIN not sayin your any of them things cause from the 2 hours I've known you, you seem like a really good guy. It just doesn't seem real to me. Pretty big SURPRISE effect there guys.

Marriage is hard work, hard, hard, hard work. Kevin you know this. There will be up's and down, you'll question your marriage, think about smothering one another in their sleep but it's one of the best feelings ever. When you have that special person and say them vows it's a life changing experience.

Besides thinking WTF are they doing, in a way I WANT you to have this. You should get to be miserable like the rest of the married people out there..lmfao Marriage is a whole different ball game baby girl so get your game face on =)

I wish you to the best of luck, dont ever go to bed angry cause you will just wake up pissed, and no matter what WORK IT OUT. I love you guys and Kevin I dont know if I should be welcoming you or feeling sorry that you are now in our family..lmfao

I'm sure you'll look BEAUTIFUL Nicki and congrats to you both!!

Since I don't have any cool give away for you guys I thought I'd share what was for dinner, I know I'm thoughtful =)


3lb Chicken
1cup Flour
Salt and Pepper to taste
1 teaspoon Paprika
Cajun Seasoning to taste

2 Eggs
1/2 cup Milk


 Season Chicken w/ salt, pepper, paprika, and Cajun seasoning.

Dip in the milk and eggs then place in bag of flour and shake

Heat grease in skillet to about 365 and drop chicken in ...

Cover it and cook for 15-20 minutes, flipping it once

Take chicken out of oil and drain on napkin..

Add some noodles and you have dinner in a half hour =)

Only when the hubby works midnights. Other than that I don't check my phone, I have 18 unread text messages as we speak and 1 missed call

Making Doughnuts

Last night when JJ got here we started looking for something to make. I really want to make Peanut Butter Balls and maybe tomorrow we will but last night we went w/ doughnuts. I looked all over the internet and compared recipes, times, and ingredients. We were going to make fried but settled w/ baked b/c all the fry recipes called for it to sit for 2 hours and it was after 8 when we started. Check here for the recipe.


1/3 cup Oil
1 Egg
1/2 tsp Salt
1 1/2 tsp Baking POWDER
1 1/2 cups Flour
1/2 tsp Nutmeg or Cinnamon ( I used cinnamon) 
1/2 cup Milk

1/2 cup Sugar
and Melted Butter
 Paper Baking Cups (12)

Preheat oven to 350 degrees

Mix all the ingredients but the sugar and butter together until smooth

Line the muffin tin w/ the paper cups and fill each 1/2 way

Bake for 15 minutes (insert tooth pick to know it's done) at 350 degrees and remove from paper immediately after they come out

Melt some butter (not a lot) and pour some sugar on a plate

Dip the doughnut in the butter and roll threw the sugar (as much sugar as you like)

Quick 20 minute doughnuts that the kids can help make =)
